This red blend, composed of 60% Cabernet Sauvignon, 20% Nebbiolo, and 20% Syrah, is crafted from hand-harvested grapes picked at dawn in the Golan Heights, Israel’s coolest wine region. The fermentation process, conducted at temperatures between 17-26°C (62-79°F), allows for a delicate extraction of color, aromas, and flavors.

Named after the vibrant Odem Forest that surrounds the winery, this wine presents a semi-opaque cherry red hue, with notes of cherry and raspberry, beautifully complemented by subtle hints of sage.
