At the beginning of the 20th century, in a small town in Czechoslovakia, Alta Itel Leah distilled alcohol from fruit grown in her own backyard. In the evenings, she and her husband tasted the fresh schnapps in a room filled with aromas of wild apples and cinnamon. They did not know that this small bottle would begin a multi-generational family journey in a country that did not yet exist.
The passion for distillation passed from generation to generation. Like the family, it made its way to the Land of Israel and settled in the Jerusalem Hills. Five generations later, Alta Itel Leah’s great-great-granddaughter, Ronny Hollander Moatti, a biochemist and food engineer with a passion for distilling alcohol, along with her uncle Moredechai (Motti) Boker, reestablished the distillery, giving the family tradition a contemporary Israeli identity and adapting it to modern palates and local agricultural produce.

Schnaps is a clean, direct distillate, made from a single grape variety or fruit, with no added sugar or flavoring. It is a spirit rooted in raw material, place, and time.
At Hollander Distillery, the schnaps is distilled from aromatic Gewürztraminer grapes, Israeli etrog, plums, pears, apricots, apples, and cherries, each produced through a meticulous process that preserves the original character of the ingredient. Raw materials are sourced from Israeli farmers, often from surplus harvests. The result is a precise schnaps with a clear Israeli identity and elegant presence in the glass

Our liqueurs are flavored, sweetened spirits made from distilled spirits and natural fruit concentrates. At Hollander Distillery, every liqueur is the result of a long, calculated development to produce the cleanest, most stable product available. And, of course, the most delicious as well. Each recipe is composed like a cocktail: lemon and ginger, red grapefruit and hops, apple, passion fruit and rum, and peach, passion fruit and chili. Balanced and expressive, the liqueurs stand perfectly on their own or as a base for a fruity cocktail.
